You start too high because you're energized. If you were tired, wasted, worn out, you'd find you'd be off key. I used to sing with 7 other people and we had to start our songs with no cues, tuning forks or anything. Thank goodness half of us had perfect pitch, but one time instead of coming up with the proper starting note, someone let one rip. Our director scolded us saying, "That is not your note." Good times.
